We celebrated Roger's birthday at restaurant Cuchara, in Lommel. The plan was to sleep in Lommel as well, but as Floyd was having
issues with this teeth and was not 100%, we decided to drive there and
come back the same day.

As aperitif, a glass of Blanc de Noirs Brut from Champagner Fleury. Happy Birthday, Roger!
The amuse: dashi | red shiso. It always start with so much flavour!
The second dish: North Sea crab | horseradish and smoked eel | gingerbread | myoga. Cutlery Dexter style :-)
Bacon and potato, prepared according to the chef's grandmom recipe. Soooo good! Langoustine | caviar 15gr | shisoflower | fingerlime.
With the langoustine, a glass of Sauvignon Blanc Suedsteiermark from Hannes Sabathi.
For Roger, the non-alcoholic drink apple and yuzu.
Irish mor oyster | beurre blanc yuzu kosho | hamachi. Great sauce!!
A glass of Mâcon Verzé "Le Chemin Blanc" from Nicolas Maillet.
Bread and butter (with cauliflower and co.). Very nice.
The signature dish akami tuna ikejime | katsuobushi | miso.

Pairing with the tuna, a glass of sake Senkin 50 and a glass of 2020 Alvarinho Primeiras Vinhas from Soalheiro.
Lobster | sea urchin | shirokombu.
Pairing with the lobster, a glass of 2018 Finca Els Camps from Jané Ventura.
Skate | plancton | winer purslane. A glass of champagne Les Grands Blancs Grand Cru from Champagner Robert Moncuit.
With the main dish, a glass of 2015 Cabernet Sauvignon from Joel Gott.
Dessert time! Yoghurt | yuzu | champagne.
An espresso macchiato, to finish a perfect dinner!
