Restaurant Session (in Sint-Martens-Voeren, Belgium): Hoeve de Bies

On my birthday, we went for lunch to restaurant Hoeve de Bies from chef Maurice Huynen.

Starting with an aperitif and some delicious appetizers.


Celery and miso. This is so good! 😍
 
Salad Val-Dieu composition.
 
As amuse bouche, a very nice combination of onions, almond and coffee.
 
As first starter...
 
...smokey kohlrabi, sea bass, granny smith. Delicious! And love the choice of the dish that it was served :-)

With the kohlrabi, a glass of 2020 Menetou Salon Blanc Morogues from Domaine Pelle.
 
Livar cheek and langoustine - aspic, crunchy skin, cucumber. It came...
 
...in two variations. Great taste!
 
Pecten Maximus, cauliflower, truffle and topinambur.

Pairing with the king scallop, a glass of Chardonnay Chateau Bon Baron. 
 
For the main dish, we went a la carte. Sashi beef with fries and grilled salad. Delicious!
 
With the main dish, a glass of Le Trescol from Mas Jullien. 

First dessert: corn, caramel, black mint. Very good!

With the dessert, a glass of 2018 Bechtheimer Hasensprung Fluxelrebe from Weingut Meiser.

The second dessert: apples from Voeren, star anise, cinammon ice cream.
