Restaurant Session (in Wittem, Netherlands): Julemont

In the end of September, we went for a Saturday lunch at restaurant Julemont✨✨from chef Guido Braeken. It is located in the beautiful Chateau Wittem in Wittem, Netherlands.
In our arrival, a butler was waiting for us outside to take us to the restaurant. I think I have never been to a place with a butler before :-D


First stop: sitting in the lounge, at the bar, for an aperitif and bites. From my seat, sneak peak to the...

A great start: a glass of Cuvée Rosé champagne from Laurent-Perrier.

With the champagne, some appetizers.

Lovely beetroot macaron with foie.
 
As first dish, hamachi, fennel, pear, wasabi. With a topping of Imperial Heritage caviar.
 
It came served in two dishes.
 
With the hamachi, a glass of 2010 Scharzhofberger Riesling Spaetlese from Weingut Von Hoevel.
 
Bread, butter, and a delicious brioche to share.
 
As second course...
 
 ...kagoshima wagyu, unagi, black garlic, crispy onion and hollandaice sauce. Wonderful, just wow!!
 
Pairing with the wagyu, a glass of 2018 Monthelie blanc from Domaine Changarnier.
 
The third dish from our menu: turbot, porcini mushroom, vin jaune, pea, brioche. 

With the turbot, a glass of 2016 Marsannier from Weingut Knipser. 
 
Norwegian lobster, sepia, tandoori, coconut, basil.
 
It tasted as it looked: fantastic! Loved the sauce!!

Continuing with the excellent wine pairing by sommelier Philipp Bock, a glass of Ried Schreckenstein Gruener Veltliner from Weingut Kurt Angerer.

As fifth course, sweetbread, bak kut teh, chantarelle, leek, sauerkraut. 

With the sweetbread, a glass of Cotes du Jura Savagnin L'Un from Baud. 

As main dish, deer, Jerusalem artichoke, hazelnut, mole, fig.
 
Pairing with the deer, a glass of 2012 Chateauneuf du Pape from Domaine de la Janasse. 

 Sweet time! Valrohna chocolate, yuzu, dulce de leche, vanilla, orange. 

With the dessert, a glass of 2009 Sauternes from Chateau Raymond-Lafon. Very nice!
 
For the perfect ending, espresso and gourmandises.

...mini strawberry tartelette and...
 
...candy.
 
Amazing food, great wine pairings, very nice and competent service. We will definitely be back!
