In the end of September, we went for a Saturday lunch at restaurant Julemont✨✨from chef Guido Braeken. It is located in the beautiful Chateau Wittem in Wittem, Netherlands.
In our arrival, a butler was waiting for us outside to take us to the restaurant. I think I have never been to a place with a butler before :-D

A great start: a glass of Cuvée Rosé champagne from Laurent-Perrier.

Lovely beetroot macaron with foie.
As first dish, hamachi, fennel, pear, wasabi. With a topping of Imperial Heritage caviar.
With the hamachi, a glass of 2010 Scharzhofberger Riesling Spaetlese from Weingut Von Hoevel.
Bread, butter, and a delicious brioche to share.
...kagoshima wagyu, unagi, black garlic, crispy onion and hollandaice sauce. Wonderful, just wow!!
It tasted as it looked: fantastic! Loved the sauce!!
Continuing with the excellent wine pairing by sommelier Philipp Bock, a glass of Ried Schreckenstein Gruener Veltliner from Weingut Kurt Angerer.
With the dessert, a glass of 2009 Sauternes from Chateau Raymond-Lafon. Very nice!
For the perfect ending, espresso and gourmandises.
